| INGREDIENTS: | ||
| 2 each small zucchini, 1/2 pound cut into 1/4 inch slices | 1/2 t salt | 2 T flour |
| corn oil for panfrying | 2 each eggs, beaten with 1/2 t salt | |
| 1 | Sprinkle the squash slices with salt and let stand for 10 minutes. Toss them with flour. |
| 2 | Heat the oil in a wok or skillet. Dip the slices into the beaten egg and fry over moderate heat for 1 minute so that they retain their crunch. Turn the slices over just once. Drain briefly on paper towels. |
| 3 | Serve warm with a dip made of 2 tablespoons soy sauce, 1 teaspoon white vinegar, 1 teaspoon toasted sesame seeds. Mix well. |
