Kimchi Jiege (Kimchi and Pork Soup)

INGREDIENTS:
2 cups water 1/2 lb homemade cabbage pickle sliced 1/4 lb boneless pork, cut into 1/4-inch dice
1/8 t black pepper 1 each scallion, sliced thin 1 each fresh semi hot green chili sliced thin, rinsed in cold water to remove seeds
1 t toasted sesame seeds 10 each dried red chili threads, as garnish



1 Put the water and kimchi in a pan, vring to a boil, add the pork and simmer over low heat for 20 minutes. Add water if the liquid evaporates too quickly.
2 Now add the pepper, scallions and fresh chili and cook for another 10 minutes. Remove from the heat and serve in individual bowls. Garnish each bowl with sesame seeds and chili threads.
3 Serve warm with rice and favorite side dishes.
