| 4 pork boneless loin or center cut chops, 3/4 inch thick (about 1 pound) | 2 teaspoons Cajun or Creole seasoning | 2 cups water |
| 1 cup uncooked regular long grain rice | 1 can (15 ounces) black beans, rinsed and drained | 1 cup frozen green peas |

| 1 | Spray each side of pork chops with nonstick cooking spray. Rub Cajun seasoning over each side of pork. Spray 10-inch nonstick skillet with nonstick cooking spray; heat over medium-high heat. Cook pork in skillet until brown on both sides. |
| 2 | Stir in water and rice. Heat to boiling; reduce heat. Cover and simmer about 15 minutes or until rice is tender and liquid is absorbed. Stir in beans and peas. Cook about 5 minutes or until beans are hot and pork is tender and slightly pink when centers of thickest pieces are cut. Garnish with tomato wedges. |
