Cheddar Benedict

INGREDIENTS:
1/4 cup butter or margarine 1/4 cup all-purpose flour 1 qt skim milk
2 tsp. garlic salt 2 tsp. mexican seasoning 1 tsp. turmeric
2 cups shredded cheddar cheese 24 (3") biscuits, split 48 (.5oz.) slices fully cooked canadian bacon, heated
48 (1oz) tomato slices 48 large poached eggs, keep warm 1-1/2 cups chopped chives or minced bell pepper



1 Prepare sauce: Melt butter in saucepan over low heat.
2 Whisk in flour until smooth.
3 Whisk in milk, continue stirring and heating sauce until it thickens. Simmer 1 to 2 minutes.
4 Stir in garlic salt, Mexican seasoning and turmeric.
5 Blend in cheese; stir until smooth. Cover; keep warm.
6 For each serving, top split-side of biscuit half with a canadian bacon slice, tomato slice and poached egg. Repeat with other half of biscuit.
7 Portion 1/4 cup sauce over the two eggs.
8 Garnish each serving with two teaspoons chives or bell pepper. Serve immediately.
