Tropical French Toast

INGREDIENTS:
3 cups sugar 3 qt. orange juice 1 cup cornstarch
1 cup cold water 1-1/2 qt banana slices 1-1/2 qt pineapple chunks or slices
1 qt orange or mandarin orange slices 1 qt 3 cups strawberries, halved 1-1/2 qt mango, diced
24 large eggs 1 cup skim milk 2 tsp sugar
1 tsp salt 72 (8-inch) flour tortillas oil as needed


1 Prepare fruit sauce: In saucepan heat sugar and orange juice over medium heat.
2 In small bowl, mix cornstarch and cold water until smooth. Whisk cornstarch mixture into orange juice.
3 Continue cooking and stirring occasionally until mixture boils and thickens. Cook 1 to 2 minutes; cool.
4 In large bowl, combine bananas, pineapples, oranges, strawberries and mango. Pour cooled sauce over fruit and stir to blend. Cover and refrigerate, if needed, until serving.
5 To prepare tortillas, beat eggs with milk, sugar and salt in mixing bowl. Refrigerate batter if not used immediately.
6 For each serving, soak three tortillas in egg mixture until saturated, about 45-60 seconds.
7 Fry tortillas on griddle in small amount of oil until all sides are browned and puffed slightly.
8 Roll up three tortillas, transfer to serving plate and top with one cup fruit sauce. Garnish with one tablespoon nuts if desired. Serve immediately. Repeat with remaining tortillas.
