INGREDIENTS:
3 green plantains 4 cups water 1 Tablespoon salt
3 large cloves garlic 1 Tablespoon olive oil 1/2 lb. chopped bacon slices
vegetable oil



1 Peel plantains, cut into 1" slices and soak for 15 minutes in water and salt.
2 Fry the plantains until done, but not browned. Drain and reserve.
3 In a mortar, crush the garlic, add olive oil and mix. Remove from mortar and reserve.
4 Crush in the mortar part of the fried plantain slices with part of the bacon (or pork crackling). Add some of the garlic mixture and mix thoroughly.
5 Spoon out the mixture and shape into 3" balls. Repeat with the rest and serve hot.
