| INGREDIENTS: | ||
| 3 green plantains | 4 cups water | 1 Tablespoon salt |
| 3 large cloves garlic | 1 Tablespoon olive oil | 1/2 lb. chopped bacon slices |

| 1 | Peel plantains, cut into 1" slices and soak for 15 minutes in water and salt. |
| 2 | Fry the plantains until done, but not browned. Drain and reserve. |
| 3 | In a mortar, crush the garlic, add olive oil and mix. Remove from mortar and reserve. |
| 4 | Crush in the mortar part of the fried plantain slices with part of the bacon (or pork crackling). Add some of the garlic mixture and mix thoroughly. |
| 5 | Spoon out the mixture and shape into 3" balls. Repeat with the rest and serve hot. |
