Peanut Orange Breakfast Puffs

INGREDIENTS:
2 cups sifted all-purpose flour 1 tablespoon baking powder 1 teaspoon salt
1/4 cup sugar 1 egg beaten 1 cup milk
1/4 cyo peanut oil 1/2 cup chopped salted peanuts Topping: 1/4 cup sugar
1 teaspoon grated orange peel 1/4 cup butter or margarine, melted



1 In large bowl, sift together flour, baking powder, salt and 1/4 cup sugar. In small bowl, combine egg, milk and peanut oil. Add liquid all at once to flour mixture, stirring only until moistened. Fold in chopped peanuts. Fill oiled 2-1/2 inch muffin cups 2/3 full. Bake in preheated 425 F oven 15 to 20 minutes or until tops are lightly browned. Meanwhile, in small bowl, blend 1/4 cup sugar and orange peel until crumbly. When muffins are baked, remove from muffin cups and immediately dip tops in melted butter, then in orange-sugar mixture. Serve warm.
