In large bowl, sift together flour, baking powder, salt and 1/4 cup sugar. In small bowl, combine egg, milk and peanut oil. Add liquid all at once to flour mixture, stirring only until moistened. Fold in chopped peanuts. Fill oiled 2-1/2 inch muffin cups 2/3 full. Bake in preheated 425 F oven 15 to 20 minutes or until tops are lightly browned. Meanwhile, in small bowl, blend 1/4 cup sugar and orange peel until crumbly. When muffins are baked, remove from muffin cups and immediately dip tops in melted butter, then in orange-sugar mixture. Serve warm. |
