Queso Fundido with Chipotles

INGREDIENTS:
1 pound jack cheese, shredded 1 cup crumbled cotija or feta cheese 3 to 4 canned chipotles in adobo sauce
1 small red bell pepper 1 bunch green onions, trimmed 2 to 3 tablespoons chopped fresh cilantro
12 hot corn or flour tortillas guacamole (optional)



1 Preheat oven to 300 degrees F.
2 In lightly oiled 9-inch square baking dish or shallow casserole, scatter cheeses in even layer. Cut chipotles into strips and scatter over cheese. Bake until melted and bubbly around edges, about 15 minutes.
3 Meanwhile, grill red bell ober hot coals or run under hot broiler, turning, until blackened on all sides. Peel, stem, seed, and cut into strips. Grill or broil green onions just until limp.
4 Sprinkle melted cheese with cilantro and spoon onto hot tortillas with grilled pepper strips and onions. Top with salsa and guacamole, if desired.
