| INGREDIENTS: | ||
| 1 lb. well-ground beef | 1 lb. well-ground pork | 1 minced garlic clove |
| 1/2 small onion, finely diced | 3 Tbsp. vinegar | 2-1/2 Tbsp. chili powder |
| 1/2 tsp. paprika | 1/4 tsp. black pepper | 1/4 tsp. cloves |
| 1 tsp. salt | 1 tsp. oregano | 2 finely crushed chilitepins |
| 1 | To ground beef and pork, blend in minced garlic clove and onions. In a bowl, add vinegar and dissolve chili powder. Add seasonings and chilitepins, mix well. Add this to meat mixture, blend in thoroughly. Form into a roll and place in an airtight bag, refrigerate until ready to use. To use, simply cook desired amount of chorizo over medium heat until chorizo turns a richer brown color and meat is fully cooked. Drain and use! |
