Chorizo (Sausage)

INGREDIENTS:
1 lb. well-ground beef 1 lb. well-ground pork 1 minced garlic clove
1/2 small onion, finely diced 3 Tbsp. vinegar 2-1/2 Tbsp. chili powder
1/2 tsp. paprika 1/4 tsp. black pepper 1/4 tsp. cloves
1 tsp. salt 1 tsp. oregano 2 finely crushed chilitepins



1 To ground beef and pork, blend in minced garlic clove and onions. In a bowl, add vinegar and dissolve chili powder. Add seasonings and chilitepins, mix well. Add this to meat mixture, blend in thoroughly. Form into a roll and place in an airtight bag, refrigerate until ready to use. To use, simply cook desired amount of chorizo over medium heat until chorizo turns a richer brown color and meat is fully cooked. Drain and use!
