| INGREDIENTS: | ||
| 6 eggs, separated | 6 Tbsp. hot water | 3/4 tsp. salt |
| 1-1/2 Tbsp. butter | 2/3 cup chorizo, cooked | |
| 1 | In a bowl, beat egg yolks vigorously. Add water and seasonings, mix well. Beat egg whites until stiff. Add egg yolks to egg whites. |
| 2 | In a skillet or omelet pan, melt butter. Add egg mixture into pan and cook over low heat until omelet is light brown and top is dry. |
| 3 | Add chorizo, then fold omelet over. Serve immediately! |
