Torta de Chorizo (Sausage Omelet)

INGREDIENTS:
6 eggs, separated 6 Tbsp. hot water 3/4 tsp. salt
1-1/2 Tbsp. butter 2/3 cup chorizo, cooked



1 In a bowl, beat egg yolks vigorously. Add water and seasonings, mix well. Beat egg whites until stiff. Add egg yolks to egg whites.
2 In a skillet or omelet pan, melt butter. Add egg mixture into pan and cook over low heat until omelet is light brown and top is dry.
3 Add chorizo, then fold omelet over. Serve immediately!
