| 2 Tbsp. chopped onions | 2 Tbsp. chopped green peppers | 2 Tbsp. butter |
| 1/2 lb chopped, cooked beef | 1/2 tsp. salt | 1/8 tsp. pepper |
| 1/8 tsp. paprika | 1/8 tsp garlic powder | 4 eggs |

| 1 | Saute onions and green peppers in butter until both are tender. Mix in meat and seasonings. Let simmer, covered. |
| 2 | In a bowl, beat eggs thoroughly and pour into a hot, well-oiled skillet, then add meat mixture evenly over the eggs. Brown both sides. |
| 3 | Serve with salsa, sliced green chiles, sliced tomatoes or avocados, and warm, buttered corn or flour tortillas. |
