Broiled Pepper-Chevre Spread

INGREDIENTS:
1 tablespoon extra-virgin olive oil pinch of cayenne pepper 7 to 12 ounces french-style goat cheese
10 turns of pepper mill



1 Preheat broiler. In a small bowl, combine oil and cayenne. In a separate bowl, combine cheese and half the oil mixture, stirring until smooth.
2 Line a small bowl with plastic wrap. Press cheese into bottom of bowl to form a dome. Turn the cheese onto an oven proof baking dish and remove plastic wrap. Brush on remaining oil mixture. Top with pepper.
3 Broil as far away from heat source as possible, until warm throughout with a golden crust, about 5 minutes. Do not burn. Serve immediately with crusty bread.
