Sesame-Peanut Pasta

INGREDIENTS:
2 medium green onions, thinly sliced (about 1/4 cup) 1/4 cup vegetable broth (use homemade or commercial low-sodium variety) 2 tablespoons reduced-fat peanut butter
1 tablespoon plus 1 teaspoon cider vinegar or rice vinegar 1 teaspoon toasted sesame oil 1/4 teaspoon cayenne pepper or to taste
4 cups hot cooked spaghetti (2 cups dried, uncooked)



1 In a medium bowl, combine all ingredients except spaghetti. Stir into hot spaghetti.
2 Serve immediately for a hot entree, or cover and refrigerate for a cold entree.
