| INGREDIENTS: | ||
| 2 pounds large shrimp | 1 cup olive oil | 7 garlic cloves, crushed |
| 1 teaspoon cayenne pepper, optional | 1/4 teaspoon ground cumin | 1/4 teaspoon curry powder |
| seasoned salt to taste | 1/4 cup finely chopped green onions, for garnish | |
| 1 | Shell and devein shrimp, leaving tails attached. Wash shrimp in cold water, dry, and place in a heatproof dish. Mix remaining ingredients except green onions, and pour over shrimp. Marinate in the refrigerator for 2 hours. Remove shrimp from dish, reserving the oil and seasonings. |
| 2 | Place dish, with reserved oils and seasonings, in a 400 degree F. oven until oil is hot. Be careful not to burn garlic. Quickly remove garlic, add shrimp, and return to the oven. Cook 3 to 5 minutes, until shrimp are pink and oil sizzles. Remove from oven, drain, stir in green onions, season with salt, and serve at once. |
