| INGREDIENTS: | ||
| 2 1-pound unwaxed cucumbers, peeled and thinly sliced | 1 onion, sliced thin | 1/2 teaspoon salt |
| 1/3 cup sour cream | 1/2 teaspoon sugar | 3 tablespoons fresh lime juice |
| 2 tablespoons minced fresh dillweed | 1/2 cup thinly sliced radishes | 1 tablespoon chopped fresh chives |
| 1 | Peel and slice cucumbers and onion, thin salt. Place salted cucumbers and onion in a paper towel-lined colander to absorb excess moisture. In a serving bowl, combine sour cream, sugar, lime juice, and dillweed, stirring until smooth. Add cucumber mixture and radishes; toss gently. Cover and chill 1 hour. Garnish with chopped chives just before serving. |
