Cousin Margaret's Pigs' Feet

INGREDIENTS:
4 pigs' feet, split 1-1/2 quarts kosher pickle juice 2 onions, quartered
1 pound fresh green beans 5 potatoes, peeled and quartered



1 Wash pigs' feet and marinate in the pickle juice overnight. The next day, remove pigs' feet from the pickle juice and rinse. Reserve half of the pickle juice. In a large pot, combine reserved juice and enough water to cover the pigs' feet by 3 inches. Bring to a boil and reduce heat to low. Add onions and simmer, covered, 2 hours; add green beans; cook an additional 1/2 hour; add potatoes and cook an additional 30 minutes or until potatoes are fork tender.
