| INGREDIENTS: | ||
| 1 (10-1/2 ounce) can beef consomme, undiluted | 1 cup uncooked long-grain rice | 1 cup water |
| 1 onion, diced | 1 green pepper, cut into julienne strips | 1/4 cup butter or margarine, melted |
| 1 (4-ounce) can sliced mushrooms, drained | 1 (2-ounce) jar diced pimiento, drained | 1 teaspoon salt |
| 1 | Combine all ingredients in a large bowl; mix well. Pour mixture into a lightly greased 12 x 8 x 2 inch baking dish. Bake at 375 F. for 1 hour or until rice is tender. |
