| 2/3 cup diced celery | 2 tablespoons minced onion | 1/4 cup butter or margarine, melted |
| 1-1/2 cups orange juice | 1 cup water | 1 cup uncooked long-grain rice |
| 2 tablespoons grated orange rind | 1 teaspoon salt | 1/8 teaspoon dried whole thyme |
| 1 | Saute celery and onion in butter in a large saucepan until vegetables are tender. Add orange juice, water, rice, grated orange rind, salt, and thyme, and stir well. Bring to a boil; cover, reduce heat, and simmer 25 minutes or until rice is tender and liquid is absorbed. |
