Orange Rice

INGREDIENTS:
2/3 cup diced celery 2 tablespoons minced onion 1/4 cup butter or margarine, melted
1-1/2 cups orange juice 1 cup water 1 cup uncooked long-grain rice
2 tablespoons grated orange rind 1 teaspoon salt 1/8 teaspoon dried whole thyme



1 Saute celery and onion in butter in a large saucepan until vegetables are tender. Add orange juice, water, rice, grated orange rind, salt, and thyme, and stir well. Bring to a boil; cover, reduce heat, and simmer 25 minutes or until rice is tender and liquid is absorbed.
