Green Beans with Sesame Miso Dressing (Saya Ingen Goma-Ae)

INGREDIENTS:
1 pound small green beans, rinsed Sesame Miso Dressing 1 tablespoon toasted sesame seeds
Sesame Miso Dressing: 2 tablespoons toasted sesame seeds 2 tablespoons white miso 1 tablespoon sugar
2 tablespoons mirin 1 teaspoon fresh lemon juice 1/2 teaspoon soy sauce



1 Trim the ends from the beans; remove any strings. Spread 1/2 of the beans evenly on a microwave-safe dinner plate. Sprinkle with a few drops of water. Cover tightly with plastic wrap. Microwave on high (100 percent power) 3 minutes. Beans should be crisp-tender and still bright green. Remove from oven; spread out to cool. Microwave remaining beans; cool. Cut beans diagonally into 2-inch lengths. Beans can be refrigerated up to 2 hours.
2 Prepare dressing. Gently mix dressing with beans. Divide salad among serving dishes. Sprinkle with additional sesame seeds.
3 Sesame Miso Dressing: Grind sesame seeds in a Japanese grinding bowl until a paste is formed. Scrape into a small bowl; mix in remaining ingredients. Use immediately or refrigerate until needed.
