Fried Calf's Brains (Smazeny Teleci' Mozek)

INGREDIENTS:
2 sets of calf's brains 3 eggs 1/2 cup flour
4 Tbs. butter 2 Tbs. fresh parsley, chopped 1 lemon



1 Soak the brains in warm water for about 1/2 hour. Remove their skin and any membranes. Separate the brains into halves. Dry the meat with papertowels. Dredge the brains in flour. Season with salt and freshly ground black pepper.
2 Heat the butter in a large frying pan on medium heat. Once it is bubbling, dip a portion of the brain the the egg, coating it well, then put in the frying pan. Do this with all the portions but do not crowd the pan. Fry the brains till lightly golden on the outside and tender inside, about 10 minutes. Sprinkle on the parsley and put on serving plates with a thick wedge of lemon.
3 Serve with boiled potatoes and a green salad or vegetable such as carrots.
