Veal Paprikash (Teleci Na Paprice)

INGREDIENTS:
1-1/2 lbs. cubed veal 2 Tbs. butter 1 large onion, chopped very fine
2 Tbs. flour 1 Tbs. paprika 2 cups beef broth
1/2 cup sour cream



1 Melt the butter in a large frying pan on medium heat. Put in the cubed veal and lightly brown on all sides. Add the chopped onion and fry, stirring occasionally, till almost golden. Sprinkle in the flour and paprika and cook for 2 minutes. Stir in the beef broth. Season well with salt and freshly ground black pepper. Bring to a low boil, reduce the heat, and simmer, partially covered, till the meat is tender, about 45 minutes.
2 Just before serving, check the seasonings for salt and pepper, then mix in the sour cream and heat through. Serve with dumplings, potatoes, or rice and green salad.
