Cabbage Soup

INGREDIENTS:
1/2 head of green cabbage, preferably savoy, finely shredded 8 cups of water or broth 1/3 lb. smoked ham hock
2 medium potatoes, diced 8-10 whole black peppercorns 2 bay leaves
1/4 teaspoon ground allspice 2 medium onions, finely chopped 2 Tbs. flour
2 Tbs. butter or lard 1/4 cup of sour cream 2 Tbs. fresh dill, chopped



1 Put the smoked meat in a large pot and cover with water or broth. Bring to boil slowly, reduce heat, cover and simmer for 1 hour. Remove the meat and cut into small cubes, about half an inch per side. Reserve the liquid.
2 Clean the cabbage and shred it into fine strips. Place the cabbage in the broth and add water to cover if needed. Add the whole peppercorns, allspice, and bay leaves. Add the diced potatoes. Bring back to a boil and keep on a simmer, partially covered.
3 Melt the butter or lard in a frying pan on medium. Add the and fry it till almost golden, stirring occasionally. Add the flour and cook for a few more minutes, stirring occasionally. Add a little broth to the flour and onion mixture, bring to a boil and cook for a couple of minutes. Add to the soup and mix well. Add the cubed meat. Cook till the potatoes and cabbage are done, about 15 minutes.
4 Stir the sour cream into the soup. Mix in the chopped dill and salt and freshly ground black pepper to taste.
