Drain the sweet-sour cabbage. Or, rinse and drain the sauerkraut. Then set cabbage or sauerkraut aside. |

Preheat griddle over medium-high heat. Meanwhile, spread mustard on one side of bread slices. Top mustard side of half of the bread slices with beef and cabbage or sauerkraut, then cheese. Top sandwiches with remaining bread slices. |

Melt butter or margarine on griddle. (If necessary, add more butter to grill second side.) Place sandwiches on hot griddle. Grill for 2 to 3 minutes or till toasted, turning once. |
