Jalapeno Corn Muffins

INGREDIENTS:
1-1/2 cups stone ground cornmeal 1/2 cup all-purpose flour 1 tablespoon sugar
2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt
1 cup sour cream 2 eggs 1 to 2 teaspoons minced jalapeno peppers



1 Preheat oven to 350 F. Grease 12 (2-1/2 inch) or 36 miniature muffin cups. In large bowl, combine cornmeal, flour, sugar, baking powder, baking soda and salt. In small bowl, combine sour cream, eggs and jalapeno peppers until blended. Stir into flour mixture just until moistened. Spoon into muffin cups. Bake 20 to 25 minutes for regular-size muffins, 12 to 15 minutes for miniature muffins or until wooden pick inserted in center comes out clean. Remove from pan.
