John's Home-Fried Potatoes

INGREDIENTS:
3 medium baking potatoes 1 large onion, sliced thin 3-1/2 tablespoons bacon drippings
1/4 teaspoon seasoned salt 1/4 teaspoon garlic powder 1/4 teaspoon pepper



1 Peel potatoes and place in a medium pan with enough cold water to cover them. Bring to a boil over medium heat. Drain the potatoes and refrigerate. When thoroughly chilled, cut the potatoes into thin slices. In a medium cast-iron skillet, saute onion in bacon drippings. Add potatoes. Add seasonings and periodically shake pan over medium heat until potatoes are golden all over. Serve hot.
