| 4 oz. butter | 2 oz. caster sugar | 6 oz. flour |
| 2 oz. ground rice | ||
| 1 | Set oven to 350 F. or Mark 4. Cream the butter and sugar together in a bowl. Gradually sift in the flour and the ground rice, kneading the mixture into a ball. On a floured surface roll or pat the dough into a round, 1/2 inch thick. Place on a plain baking sheet. Pinch up the edges and prick the top with a fork. Bake for about 35-40 minutes or until firm and pale golden. While still warm, cut into triangles and sprinkle with caster sugar. |
