INGREDIENTS:
4 slices buttered toast or 4 slices fried bread 1 oz. butter 4 eggs
2 tablespoons milk small pinch of salt pepper
Anchovy fillets



1 Make the toast and butter it or fry the bread. Keep warm. Melt the butter in a saucepan. Stir in the eggs and milk, season and cook over a gentle heat, season and cook over a gentle heat, stirring continuously, until the mixture thickens. Spoon the eggs on to the toast and top with anchovy fillets. Selicious as a light supper.
