| INGREDIENTS: | ||
| 2 lb. green tomatoes, skinned and chopped | 2 lb. cooking apples, cored and chopped | 1 lb. onions, peeled and finely chopped |
| 4 oz. sultanas | 4 oz. raisins | 1/2 oz. ground ginger |
| 12 oz. brown sugar | 1 tablespoon dry mustard powder | 1 teaspoon salt |
| 1 pint vinegar (wine or malt) | ||
| 1 | Prepare the tomatoes, apples and onions, leaving the skin on the apples. Place in a saucepan with all the other dry ingredients. Add the vinegar. Bring to the boil over a gentle heat. Stir until the sugar dissolves. Simmer gently for about 2 hours, stirring from time to time. When cooked put into clean, warm jars and cover with vinegar-proof tops. Keep in a cool place. |
