Preheat oven to 200 C. Lightly grease a flat baking tray. |

Place oatmeal into a large mixing bowl, sift flour, bicarbonate of soda and sugar over the oats. Combine. |

Melt butter in a pan, pour it through dry ingredients and mix well. Turn mixture out onto extra oatmeal and knead lightly. |

Roll or pat pastry until 1 cm thick, cut pastry into sixteen squares. Place on prepared tray, prick all over with a fork. Bake for 15 minutes, or until golden and crisp. Cool then remove from tray. |

Note: This recipe is sweetened and served as an afternoon tea bread. Without sugar it can be used as a base for savoury toppings. |
