INGREDIENTS:
2 cups fine ground oatmeal 1 cup plain flour 1/2 teaspoon bicarbonate of soda
1/4 cup caster sugar 180 g butter 1 cup fine ground oatmeal, extra



1 Preheat oven to 200 C. Lightly grease a flat baking tray.
2 Place oatmeal into a large mixing bowl, sift flour, bicarbonate of soda and sugar over the oats. Combine.
3 Melt butter in a pan, pour it through dry ingredients and mix well. Turn mixture out onto extra oatmeal and knead lightly.
4 Roll or pat pastry until 1 cm thick, cut pastry into sixteen squares. Place on prepared tray, prick all over with a fork. Bake for 15 minutes, or until golden and crisp. Cool then remove from tray.
5 Note: This recipe is sweetened and served as an afternoon tea bread. Without sugar it can be used as a base for savoury toppings.
