Black Pudding with Cabbage and Apple

INGREDIENTS:
2 rashers bacon 500 g black pudding 30 g butter
1 small onion, diced 3 cups shredded cabbage 2 tart green apples, peeled and sliced
2 tablespoons stock ground pepper buttered toast, to serve



1 Remove the rind from the bacon and cut into strips. Skin black pudding and cut diagonally into 1-1/2 cm thick slices.
2 Heat butter in pan. Add bacon, cook for 2-3 minutes and remove. Add black pudding to pan, cook for 5 minutes, remove and keep warm.
3 Cook diced onion for 1 minute, add cabbage, bacon, apple and stock. Cover and cook gently for about 10-15 minutes.
4 Arrange cabbage mixture over base of a serving plate. Top with black pudding and serve with toast.
5 Note: Fry Black Pudding with bacon for breakfast.
