Remove the rind from the bacon and cut into strips. Skin black pudding and cut diagonally into 1-1/2 cm thick slices. |

Heat butter in pan. Add bacon, cook for 2-3 minutes and remove. Add black pudding to pan, cook for 5 minutes, remove and keep warm. |

Cook diced onion for 1 minute, add cabbage, bacon, apple and stock. Cover and cook gently for about 10-15 minutes. |

Arrange cabbage mixture over base of a serving plate. Top with black pudding and serve with toast. |
