Cut potatoes into quarters and cook in boiling water for 15 minutes, or until tender. Drain, mash with a fork until dry and mealy. |

Cook cabbage in boiling water for 10 minutes, remove from pan with tongs, drain well. Melt butter in a large pan, add cabbage and stir in spring onions, cook for 1 minute. |

Combine cabbage mixture with mashed potatoes. Add enough warm milk to give a creamy consistency. Season with pepper and serve, garnished with chopped parsley. Drizzle over extra melted butter for a richer dish. |
