Albondigas (Meatball Soup)

INGREDIENTS:
1 lb. ground beef 3 Tbsp. diced onion 1/4 tsp. oregano
salt and pepper 1 bay leaf 6 cups water
4 to 5 chopped stewed tomatoes 1/2 cup pre-cooked white rice 1 cup cooked, tender-firm sliced potatoes



1 Take raw meat and blend in onion. Add oregano, salt, pepper. Form 18 meat balls.
2 In a 2-quart cooking pot, add water, the chopped tomatoes and bay leaf. Add meat balls and cook over medium heat, covered.
3 When meat is fully stewed, remove bay leaf, add rice and sliced potatoes. Simmer over low heat covered until potatoes are tender.
