| INGREDIENTS: | ||
| 1 lb. ground beef | 3 Tbsp. diced onion | 1/4 tsp. oregano |
| salt and pepper | 1 bay leaf | 6 cups water |
| 4 to 5 chopped stewed tomatoes | 1/2 cup pre-cooked white rice | 1 cup cooked, tender-firm sliced potatoes |
| 1 | Take raw meat and blend in onion. Add oregano, salt, pepper. Form 18 meat balls. |
| 2 | In a 2-quart cooking pot, add water, the chopped tomatoes and bay leaf. Add meat balls and cook over medium heat, covered. |
| 3 | When meat is fully stewed, remove bay leaf, add rice and sliced potatoes. Simmer over low heat covered until potatoes are tender. |
