Artichoke-Heart Soup (Sopa de Alcachofras)

INGREDIENTS:
10 artichoke hearts 1 small onion, chopped fine 8 cups water
2 teaspoons salt 2 cups rich milk 1 tablespoon corn meal
salt 2 tablespoons butter 6 tablespoons grated Parmesan cheese
1/2 cup croutons



1 Cut up artichoke hearts, add onion, and cook in water and salt until tender. Mix a little of the cold milk with the corn meal and add to soup, with the rest of the milk. Cook until it thickens. Taste for salt. Add the butter and grated cheese. Serve and place a spoonful of the croutons on each plate.
