| 1 pound beef flank steak, cut thin across the grain | 1 tablespoon dry sherry | 2 tablespoons light soy sauce |
| 1 teaspoon fresh-grated ginger | 2 tablespoons peanut oil | 3 cups leeks, cleaned and sliced |
