INGREDIENTS:
1 pound beef flank steak, cut thin across the grain 1 tablespoon dry sherry 2 tablespoons light soy sauce
1 teaspoon fresh-grated ginger 2 tablespoons peanut oil 3 cups leeks, cleaned and sliced
black pepper



1 Marinate the meat in the sherry, soy sauce, and ginger for 15 minutes. Chow or stir-fry very quickly in hot pan, and add leeks at the last minute. Add ample black pepper.
