Dr. Carver's Sweet Potato Muffins

INGREDIENTS:
1 sweet potato, weighing about 3/4 pound 1 heaping tablespoon butter pinch of salt
2 well-beaten eggs 1/2 cup milk 1 teaspoon baking powder
2 cups flour



1 Boil sweet potato until thoroughly done. Mash very fine and pass through a colander to remove any lumps, add butter, a little salt, and whip well. Now add eggs and 1/2 cup of milk, sift in baking powder and enough flour to make a soft batter. Bake in muffin or gem pans in a 400 degree oven for about 30 minutes.
