| INGREDIENTS: | ||
| 1 sweet potato, weighing about 3/4 pound | 1 heaping tablespoon butter | pinch of salt |
| 2 well-beaten eggs | 1/2 cup milk | 1 teaspoon baking powder |
| 2 cups flour | ||
| 1 | Boil sweet potato until thoroughly done. Mash very fine and pass through a colander to remove any lumps, add butter, a little salt, and whip well. Now add eggs and 1/2 cup of milk, sift in baking powder and enough flour to make a soft batter. Bake in muffin or gem pans in a 400 degree oven for about 30 minutes. |
