Rice and Ham (Arroz com Presunto)

INGREDIENTS:
1 tablespoon lard or vegetable fat 1 small onion, chopped 1 teaspoon garlic salt
4 tablespoons chopped parsley 4 tomatoes, peeled 2 cups rice
2 slices uncooked ham 4 cups water 4 hard-cooked eggs, sliced
olives 1 cup grated cheese



1 Make a refogado of the lard or fat, onion, garlic salt, parsley, and 2 of the tomatoes. Add the rice, ham cut in serving-size pieces, and water. Cook until rice is tender. Heap rice in the center of a hot platter, surround with pieces of ham, slices of hard-cooked egg, 2 tomatoes cut in slices, and olives. Sprinkle with grated cheese and serve very hot.
