| INGREDIENTS: | ||
| 1 tablespoon lard or vegetable fat | 1 small onion, chopped | 1 teaspoon garlic salt |
| 4 tablespoons chopped parsley | 4 tomatoes, peeled | 2 cups rice |
| 2 slices uncooked ham | 4 cups water | 4 hard-cooked eggs, sliced |
| olives | 1 cup grated cheese | |
| 1 | Make a refogado of the lard or fat, onion, garlic salt, parsley, and 2 of the tomatoes. Add the rice, ham cut in serving-size pieces, and water. Cook until rice is tender. Heap rice in the center of a hot platter, surround with pieces of ham, slices of hard-cooked egg, 2 tomatoes cut in slices, and olives. Sprinkle with grated cheese and serve very hot. |
