Onions Sauteed with Peppers

INGREDIENTS:
3 to 4 yellow onions, peeled and sliced 3 tablespoons olive oil 2 cloves garlic, crushed
2 green peppers, sliced 2 red bell peppers, sliced 2 tablespoons tomato paste
salt and pepper to taste 3 tablespoons red wine 1 teaspoon oregano
dash of Tabasco (optional) Fresh-grated Parmesan or Romano cheese



1 Saute the onions and the garlic in the oil just until tender. Add the peppers, and saute for a few minutes more. Stir in all remaining ingredients except for the cheese. Place in a small, deep baking dish or casserole, and top with the cheese. Bake at 375 F. for 45 minutes.
2 Hint: To peel small onions for boiling or sauteing, simply place them in boiling water and let them simmer for a few minutes. Drain and cool them. The onions can be peeled in a few minutes.
