| INGREDIENTS: | ||
| 3 to 4 yellow onions, peeled and sliced | 3 tablespoons olive oil | 2 cloves garlic, crushed |
| 2 green peppers, sliced | 2 red bell peppers, sliced | 2 tablespoons tomato paste |
| salt and pepper to taste | 3 tablespoons red wine | 1 teaspoon oregano |
| dash of Tabasco (optional) | Fresh-grated Parmesan or Romano cheese | |
| 1 | Saute the onions and the garlic in the oil just until tender. Add the peppers, and saute for a few minutes more. Stir in all remaining ingredients except for the cheese. Place in a small, deep baking dish or casserole, and top with the cheese. Bake at 375 F. for 45 minutes. |
| 2 | Hint: To peel small onions for boiling or sauteing, simply place them in boiling water and let them simmer for a few minutes. Drain and cool them. The onions can be peeled in a few minutes. |
