Orange, Grapefruit, and Mint Salad

INGREDIENTS:
2 grapefruits 3 oranges liquid sweetener to taste (optional)
8 sprigs of mint



1 Using a serrated knife, cut away the peel and the white parts from the grapefruit and oranges. Carefully cut inside the skin of each segment to remove each section of flesh.
2 Squeeze the membrances over a bowl to extract all the juice. Sweeten the juice with the liquid sweetener, if required.
3 Arrange the orange and grapefruit segments altenately on 4 individual serving dishes.
4 Using a sharp knife, chop 4 sprigs of the mint very finely. Stir the chopped mint into the fruit juice.
5 Carefully spoon the juice over the arranged fruit segments and chill thoroughly. Garnish with a sprig of mint before serving.
