| INGREDIENTS: | ||
| 2 cups dried green split peas, rinsed and picked over | 2-1/2 cups water | salt to taste |

| 1 | Place the split peas and the water in a pan with a lid. Add a little salt, and bring to a boil, stirring. Simmer, covered, until the whole thing turns to mush, about 1 hour (you may have to add a little water). Be careful not to burn this. Stir often. When a nice mushy consistency has been reached, add a little butter, salt, and pepper, if needed. |
