| INGREDIENTS: | ||
| 3 unpeeled potates, boiled | 4 cups cabbage, chopped and blanched | 1/2 medium yellow onion, peeled and chopped |
| 1 zucchini, grated | 3 slices bacon, chopped and browned (save the fat) | 1/4 cup chopped ham |
| fresh-ground black pepper to taste | ||
| 1 | Mash the unpeeled potatoes with your hands (we don't want to mash these too much, just smash them up). Add the rest of the ingredients except for the reserved bacon fat, and toss gently to mix. |
| 2 | Heat a frying pan (preferable one with a SilverStone lining). Place the bacon fat in the pan, and press the potato mixture in on top. Brown over medium-low to medium heat until golden brown on the bottom. This will probably take about 1/2 hour. Invert onto a plate, and serve. |
