| INGREDIENTS: | ||
| two 1-pound cans hearts of palm | DRESSING: 1 tablespoon lime or lemon juice | 1 tablespoon Dijon Mustard |
| salt, freshly ground pepper | 4 tablespoons vegetable oil | |
| 1 | Thoroughly drain the hearts of palm and cut them into 1/2-inch slices. Set aside. |
| 2 | In a bowl beat together the lime or lemon juice with the mustard and salt and pepper to taste. Gradually beat in the oil. Pour the dressing over the palm heart slices and toss lightly. |
