Hearts of Palm Salad (Salada de Palmito)

INGREDIENTS:
two 1-pound cans hearts of palm DRESSING: 1 tablespoon lime or lemon juice 1 tablespoon Dijon Mustard
salt, freshly ground pepper 4 tablespoons vegetable oil



1 Thoroughly drain the hearts of palm and cut them into 1/2-inch slices. Set aside.
2 In a bowl beat together the lime or lemon juice with the mustard and salt and pepper to taste. Gradually beat in the oil. Pour the dressing over the palm heart slices and toss lightly.
