| INGREDIENTS: | ||
| 4 large carrots | 1 cup raisins | 1 cup chopped walnuts |
| 2 tbsps sesame seeds | DRESSING: 2 tbsps oil | 1 tbsp lemon juice |
| 6 tbsps tahini (sesame paste) | 6 tbsps warm water | 2 tbsps heavy cream |
| salt and freshly ground black pepper | 1 tbsp sugar | |
| 1 | Place the carrots in iced water for 1 hour. Dry them and grate coarsely into a bowl. Add the raisins, nuts, and sesame seeds. |
| 2 | Mix the dressing ingredients together thoroughly, adding more cream if the dressing appears too thick. If the dressing separates, beat vigorously until it comes together before adding additional cream. |
| 3 | Toss with the carrot salad and serve. |
