Carrot Salad with Sesame Dressing

INGREDIENTS:
4 large carrots 1 cup raisins 1 cup chopped walnuts
2 tbsps sesame seeds DRESSING: 2 tbsps oil 1 tbsp lemon juice
6 tbsps tahini (sesame paste) 6 tbsps warm water 2 tbsps heavy cream
salt and freshly ground black pepper 1 tbsp sugar



1 Place the carrots in iced water for 1 hour. Dry them and grate coarsely into a bowl. Add the raisins, nuts, and sesame seeds.
2 Mix the dressing ingredients together thoroughly, adding more cream if the dressing appears too thick. If the dressing separates, beat vigorously until it comes together before adding additional cream.
3 Toss with the carrot salad and serve.
