Sausage and Spinach Meatballs |

| INGREDIENTS: | ||
| 2 pounds Italian Sausage | 1 large yellow onion, peeled and chopped | 1 package frozen spinach, defrosted, drained, and squeezed dry |
| salt and pepper to taste | 1/2 pound ricotta cheese | 2 eggs |
| 1/8 teaspoon nutmeg | 2 tablespoons olive oil | 1 cup dry white wine |
| 1 | Mix together all the ingredients, except the white wine and oil. Form into meatballs, and brown in oil on both sides. Add the white wine, cover the pan, and allow to simmer for 20 minutes. You may need to add more wine so that the pan does not dry out. |
| 2 | Serve with vegetables, pasta or rice, a large green salad, and good heavy red wine. |
