4 ounces dried cellophane noodles 1/4 cup dried shrimp 4 medium dried shiitake mushrooms
1-1/2 tablespoons vegetable oil 2 cloves garlic, peeled and lightly crushed 2 ounces fresh ginger, peeled and thinly sliced
4 ounces pork tenderloin, thinly sliced against the grain 6 ounces baby bok choy or similar greens, leaves separated and halved lengthwise 2 scallions, root ends and tough green tops removed, cut into 1-1/2-inch long pieces and halved lengthwise
1 cup light pork stock 2 tablespoons fish sauce 1 tablespoon thick soy sauce
