| INGREDIENTS: | ||
| 2 cups Masa Harina (dehydrated masa flour) | 1-1/3 cups warm water | 3 tablespoons lard |
| 1 teaspoon salt | about 1/2 cup grated Parmesan cheese | 1/4 cup flour |
| salad oil, shortening, or lard for frying | 1 can (10 oz.) Enchilada or Mexican red chile sauce | |
| 1 | Mix thoroughly the masa flour and water. Stir in lard, salt, 1/4 cup of the cheese, and flour. Form into round cakes about 5 inches in diameter and 1/4 inch thick. Dip into remaining cheese to coat. |
| 2 | Drop into hot oil (about 375 F) and fry until golden and crisp. Serve the flat cakes with chilled sauce to spoon over. Makes six 5-inch-diameter Enchiladas. |
