Sonora Enchiladas with Masa (Enchiladas de Sonora Con Masa)

INGREDIENTS:
2 cups Masa Harina (dehydrated masa flour) 1-1/3 cups warm water 3 tablespoons lard
1 teaspoon salt about 1/2 cup grated Parmesan cheese 1/4 cup flour
salad oil, shortening, or lard for frying 1 can (10 oz.) Enchilada or Mexican red chile sauce



1 Mix thoroughly the masa flour and water. Stir in lard, salt, 1/4 cup of the cheese, and flour. Form into round cakes about 5 inches in diameter and 1/4 inch thick. Dip into remaining cheese to coat.
2 Drop into hot oil (about 375 F) and fry until golden and crisp. Serve the flat cakes with chilled sauce to spoon over. Makes six 5-inch-diameter Enchiladas.
