Pineapple Bars

INGREDIENTS:
1 cup all-purpose flour 1 teaspoon baking powder 1/2 cup (1/4 lb.) butter or margarine
2 eggs 1 tablespoon milk 1 can (about 1 lb. 4 oz.) crushed pineapple, drained
1/4 cup melted butter 1 cup sugar 1 cup flaked coconut
1 teaspoon vanilla



1 Sift flour before measuring, then sift again with the baking powder. With pastry blender, cut in the 1/2 cup butter or margarine until mixture is crumbly. Beat 1 egg with the milk; stir into flour mixture. Spread over bottom of 8-inch-square baking pan. Spread pineapple over top. Beat remaining 1 egg thoroughly; stir in melted butter, sugar, flaked coconut, and vanilla. Spread this topping over pineapple. Bake in a 350 F. oven for 35 to 40 minutes. Cool and cut into about 16 squares.
