Red Beans with Peas and Pasta

INGREDIENTS:
1/2 pound red beans, soaked overnight, drained 1/2 pound pasta 1/4 cup olive oil
1/8 cup white wine vinegar 2 tablespoons fresh lemon juice salt and pepper
oregano to taste (optional) 1 10-ounce size package frozen green peas parsley for garnish
sugar to taste



1 Cook the beans in 1 quart fresh water for 1 hour. Drain. Be sure that they are not overdone. Let cool.
2 Cook the pasta, drain, and chill in cold water.
3 Prepare dressing of the oil, vinegar, lemon juice, salt and pepper, and oregano if desired. Add sugar to taste.
4 Drain the pasta, and place in bowl with beans. Rinse the defrosted frozen peas, and drain. Add to the bowl with the dressing, and toss. Garnish with parsley.
5 This is served as a starch or vegetable dish. It goes with just about any menu.
