Steaks with Mushrooms and Wine |

| INGREDIENTS: | ||
| 2 sirloin or rib-eye steaks | 1 clove garlic | 2 Tbs. vegetable or olive oil |
| 1/3 lb. white mushrooms, sliced | 1/2 cup dry red wine | 2 Tbs. butter |
| 1 Tbs. fresh parsley, chopped | ||
| 1 | Lightly pound the steaks on both sides with a meat mallet till about 1/2" thick. Cut the garlic clove in half and rub the garlic onto both sides of the steaks. Season them with salt and freshly ground black pepper. |
| 2 | Heat the oil in a large frying pan on medium-high. Once the oil is almost smoking, put in the steaks. Sear them to a golden brown on both sides. Add the sliced mushrooms and brown them quickly. Pour in the red wine and let it bubble, rapidly, for a couple of minutes. Mix in the butter. If you like your steaks closer to well done, let them simmer in the sauce for a couple more minutes. Sprinkle on the parsley. Serve with new potatoes and a green salad. |
