Gypsy Steaks

INGREDIENTS:
2 sirloin steaks 2 Tbs. lard or oil 2 rashers of bacon, sliced
1 large yellow or sweet white onion, finely sliced 1 Tbs. paprika pinch of cayenne pepper
2 Tbs. flour 1 cup beef broth or water 1 Tbs. fresh parsley, chopped



1 Trim the steaks of excess fat. Pound them lightly with a meat mallet till about 1/2" thick. Season with salt and pepper.
2 Heat the lard or oil in a large frying pan on medium-high. When quite hot, put in the steaks and brown them on each side for 2 minutes. Remove and turn the heat down to medium.
3 Add the bacon to the pan and fry till almost crisp. Add the sliced onion and fry, stirring occasionally, till almost golden. Add the paprika and a pinch of cayenne to taste. Cook for 2 minutes. Add the flour and cook, stirring occasionally, for another 2 minutes. Pour in the broth or water, season with salt and pepper, and bring to a light boil.
4 Put the steaks back in the pan and heat them through, or cook for a few minutes longer for more well-done meat. Mix in the parsley and serve with boiled or fried potatoes.
