Steam sausage, cool in refrigerator. |

Mix cheddar cheese with sausage and season with salt and pepper. |

Defrost puff pastry squares. Egg wash edges of pastry squares. |

Portion 2-1/2 oz of sausage mixture into each square and fold the squares in half either to form a triangle or a rectangle. Use a fork to press edges together firmly. |

Egg wash top of each turnover. |

Bake at 350 F. for 15-20 minutes, until puff pastry has risen and temperature of filling is 165 F. Hold at 160 F until time to serve. |
