Sausage and Cheese Turnovers

INGREDIENTS:
9-1/2 lbs. ground pork sausage 6 lbs. cheddar cheese, shredded 96 puff pastry squares
6 cups egg wash 2 tsp. salt, granulated 1-1/2 tsp black pepper, ground



1 Steam sausage, cool in refrigerator.
2 Mix cheddar cheese with sausage and season with salt and pepper.
3 Defrost puff pastry squares. Egg wash edges of pastry squares.
4 Portion 2-1/2 oz of sausage mixture into each square and fold the squares in half either to form a triangle or a rectangle. Use a fork to press edges together firmly.
5 Egg wash top of each turnover.
6 Bake at 350 F. for 15-20 minutes, until puff pastry has risen and temperature of filling is 165 F. Hold at 160 F until time to serve.
7 Prepare as close to dinner time as possible since this product does not hold well.
